Crumbly Energy Power Munchkins

You know the feeling when you go to the supermarket, and you really want a healthy snack but every time you pull off a box from the grocery-store shelf, you look at the ingredients on the snack box, and they all include sugar and/or sodium?
That's how I feel. From Costco to Walmart, that is what I've found to be the case. And I really dislike that. I love snacks. Sometimes I NEED snacks but I don't want to eat something that will not get my body any nutrients or worse, promote chronic illness.
One store I have found healthier granola bar options at has been at Sprouts. However, even those granola bars don't taste so great. I would much rather pull out the healthy apple or banana then have to eat one of the "healthier" granola bar options I find at Sprouts.
I'm not going to lie, their trail mix is pretty great and can be healthy. But I'm not talking about the trail mix option with M+M's, that's obviously not the best healthy option to go for.
But what do you do when the only option you have is trail mix? You get bored of eating it.
I literally cannot find a variety of healthy options (in stores) for my kiddos and I to snack on!!
It's ridiculous and just too bad.
I mean, we can always go for the fruit, the trail mix. Or the plain rice cakes, but sometimes we get bored and want something a little better. A little more homemade. Sometimes we need something a little different that contains no sugar, satisfying flavor and we have the privilege of knowing exactly what is inside the recipe.
This need for snacks and this craving for flavor inspired me to create the crumbly power muffins.
This one-of-a-kind snack is filled with flax, contains no sugar and can be loaded with protein if you're a nut-kind-of-person. It's simple to make and will get you the snack that we all yearn for-a feel-great, energy producing, simple, healthy, satisfying kind of snack.
Here is the crumbly power munchkins recipe you will love!
What ingredients will you need for crumbly energy power munchkins?
1/3 cup coconut flour
2 tbsp + 1 tsp honey
1/3 cup organic all-natural peanut butter
1/3 cup + 1 tbsp raw oats
1 tsp olive oil
4 tbsp rice milk(or other milk of your choice)
2 tbsp crushed walnuts
2 tbsp flaxseed
(optional) 1-2 tbsp organic plain raisins
How do you make crumbly energy power munchkins?
Mix all of the ingredients together in any order in a large bowl. The recipe will yield about 10 crumbly energy power munchkins. Double the recipe if you'd like to store more crumbly power munchkins into your fridge for later.
Add the optional raisins into the mix(if you're a raisin kind of person).
Form the dough you create into balls.
Grease a baking sheet and bake @ 350 for 10 minutes. Let them cool, then enjoy!
Tip: Add more milk 1 tsp at a time into the dough if it is too crumbly to hold it together. When it holds together, form into balls.
