5 Ingredients Vegan Pasta for busy Moms
Hey Squad,
Pasta is in my top 5 favorite meals. My husband is always excited when I make pasta because he loves the way I make it. I know what you're wondering what's so exciting about some noodles and some sauce lol. I always try to make mine easy but full of flavor. I've been trying more healthy plant-based/vegan meals lately so why not start with my favorite. So I'm doing a two-part pasta series on my blog. A vegan-friendly quickie pasta dish and a slow simmering spaghetti and meatballs, stay tuned!
I was challenged by @kristel.brown on Instagram to recreate one of her delish vegan dishes so I thought this was the perfect opportunity to get in the kitchen and experiment on a vegan pasta dish. One that can pass the family test.
It only takes 5 main ingredients, not including the pasta:
Olive oil
Garlic
Sun-dried tomatoes (optional)
Almond milk
Your favorite veggies, I used mushrooms
Go Veggie Vegan Parmesan Cheese
A dash of paprika (optional)
Heat up some olive oil on medium to low heat.
Add the garlic and tomatoes and let them cook down a bit and soften up.
Add a cup of almond milk and your favorite veggies. Cook down till the veggies get soft and the milk gets a bit brown.
Add your cooked pasta and sprinkle Go Veggie parmesan cheese all over (as much as you needed). The Go Veggie cheese taste great much to my surprise. It really gives it a robust cheesy flavor.
And done! I paired it with a side of fresh spinach and slices of avocado for a nice texture change and add some bright color to the dish. The family loved it and nobody asked if it was vegan or not. This meal is perfect for when you don’t have much time. It's also perfect for meal prep which serves us busy moms great!
